Using Your Meat Thermometer

When using a meat thermometer some prefer to use the leave-in type of meat thermometer. With this type of thermometer you can continually monitor the temperature of your meat and most models will provide a mechanism whereby you can be notified when the core temperature of the meat reaches a level of your choosing.
In this manner, you will be continually monitoring the temperature of your roast, and be instantly notified when it attains this temperature, so you can avoid over cooking your meat and thus potentially destroying a very expensive cut of meat.
